Being stuck at home during quarantine and not being able to travel has turned us all into baking experts. While I’m not a tea drinker, I love the scent of Earl Grey tea so I decided to combine my favourite cupcake recipe with an Earl Grey twist. This Earl Grey Cupcake recipe worked out pretty well for me so I thought I’d share.
This recipe should make 12 cupcakes.
Ingredients
Dry ingredients:
1 tablespoon Earl Grey tea for brewing
2 teaspoons Earl Grey tea for grinding
1 ⅓ cups all-purpose flour
¼ teaspoon baking soda
½ teaspoon salt
1 teaspoon baking powder
Wet ingredients:
6 tablespoons of hot water
¼ cup butter, softened
½ cup white sugar
2 large eggs
¾ cup buttermilk
2 teaspoons white vinegar
1 teaspoon vanilla extract
Directions
- Preheat oven to 350 degrees F (175 degrees C) and grease cupcake tin with butter (or coconut oil works as well).
- Steep the 1 tablespoon of Earl Grey tea leaves in 6 tablespoons of water. Reserve 4 tablespoons.
- In a blender, grind the 2 teaspoon of Earl Grey tea leaves into a coarse grind. Set aside.
- Mix the grounded tea leaves, flour, baking soda, salt, and baking powder together in a large mixing bowl until combined. Set aside.
- Place butter and sugar into a mixing bowl and beat until light and fluffy. Add room temperature eggs into butter-sugar mixture, one at a time, mixing the first egg in thoroughly before adding the second. Scrape down sides of bowl as you work.
- Beat buttermilk and vinegar into moist ingredients, followed by vanilla extract and 4 tablespoons of steeped tea.
- Pour dry ingredients into wet ingredients and gently whisk by hand until batter is smooth. Spoon batter into prepared muffin cups, filling them about 3/4 full.
- Bake in the preheated oven until a toothpick inserted into the center of a cupcake comes out clean, 20 to 25 minutes. Let sit in the pan for 10 minutes; remove cupcakes from pan and cool completely on a cooling rack.
8 steps sounds like a lot of work but this Earl Grey Cupcake Recipe really took me 15-20 minutes to put together and another 20 mins to bake. I’ve been having 1 of these Earl Grey Cupcakes every morning for breakfast with my latte 🙂
